This medium-sized tree can grow up to 40 feet, (12 m.) has glossy green, deciduous leaves and light gray bark. The oval-shaped, single-stoned fruit is green to start with and becomes dark brown over time. Similar to figs, the fruit will dry and become wrinkled when left on the vine. The fruit has a similar taste to an apple. How to Grow a Jujube Tree Jujubes do best in warm, dry climates, but can tolerate winter lows down to -20 F. (-29 C.) Growing jujube trees is not difficult as long as you have sandy, well-drained soil. They are not particular about soil pH, but do need to be planted in full sun. The tree can be propagated by seed or root sprout. Hardy in U.S. Department of Agriculture plant hardiness zones 6 through 10, they fruit best in areas with summer sun and heat. USDA planting zones 6-11. Seeds Germination: Wrap the jujube stones in moist sphagnum moss and place them inside a sealable plastic bag. Leave the bag open 1 inch to allow excess moisture to escape. Store the seeds in the refrigerator for 90 days to cold stratify. Moisten the sphagnum moss whenever it feels barely damp. Only moist, never wet as that will rot the seeds. Place them in a bowl & cover them with just-boiled water and soak them for 24 to 36 hours. Rub the side of each jujube stone with a steel rasp until a small hole forms or gently crack the endocarp with a handheld nutcracker. This is known as scarifying the seed. It weakens the endocarp, or hard outer layer, so the seed inside will germinate faster. It is Very Important to "mimic their natural conditions" and provide alternating temperatures for optimal germination rates. Simply use a heated propagator to keep temperatures of 80 F during the day, and drop it to 60 F at night. Sow the seeds in 4" pots apex. 1/2" deep, then water to ensure the soil settles.
